Speedy peach crumble

Ingredients

  1. 6 ripe peaches, pitted and sliced (about 500 g or 1 lb.)
  2. 15 mL (1 tbsp.) butter
  3. 30 mL (2 tbsp.) honey
  4. 2 mL (1/2 tsp.) ground nutmeg
  5. 60 mL (1/4 cup) chopped almonds
  6. 375 mL (1 1/2 cups) granola
  7. 250 mL (1 cup) fat-free vanilla yogurt, as a topping

Directions

  1. Place a large cast-iron or other ovenproof skillet on the barbecue rack or on the stovetop, and heat at medium-high. Melt butter and arrange peaches in a single layer in skillet. Cook for 4 to 5 minutes, until they begin to soften and turn golden. Turn peaches over and cook for 4 to 5 minutes longer, until tender. 
  2. Turn off the heat; drizzle peaches with honey, and add nutmeg and almonds. Stir to coat peaches well. 
  3. Remove skillet from heat. Scatter 250 mL (1 cup) granola on peaches. Immediately divide among four plates and top each serving with a generous dollop of vanilla yogurt.
