Ingredients

  1. 2 large Spanish onions, peeled
  2. Vegetable oil
  3. 22 mL (1 1/2 tbsp.) mild curry or turmeric
  4. To taste, salt and pepper
  5. 2 mL (1/2 tsp.) Espelette or other pepper (leave out for a milder dish)
  6. 1 can (796 mL) diced tomatoes
  7. 450 g (1 lb.) ground beef
  8. 250 mL (1 cup) poultry
  9. or veal stock or broth
  10. 175 mL (3/4 cup) coconut milk
  11. 7 mL (1/2 tbsp.) dried mint
  12. 30 mL (2 tbsp.) maple syrup

Directions

  1. Purée onions using a food processor.
  2. Heat a bit of oil in a heavy skillet over medium heat and caramelize onion purée, stirring occasionally for approx. 15 minutes.
  3. Add curry, salt, pepper, and Espelette pepper, if desired.
  4. Heat 2 minutes, stirring occasionally.
  5. Drain tomatoes and purée them in a food processor.
  6. Add tomato purée to onion purée.
  7. Continue cooking 5 to 8 minutes. Set aside.
  8. In another skillet, heat a bit of oil and brown ground beef, breaking it up into fairly large pieces.
  9. Add poultry or veal stock or broth halfway through cooking and reduce by half.
  10. Add cooked beef to onions.
  11. Add coconut milk, mint, and maple syrup.
  12. Adjust seasoning (add more syrup as needed).
  13. Blend well. Serve on brioche bread with sour cream, fresh cream, or plain yogurt.
