Spanish-style serrano and iberico bites

Ingredients

  1. 100 g Serrano ham (1 package)

Serrano and manchego

  1. 880 g manchego, cut into 2 cm (1 in.) thick slices
  2. 3 fresh figs, thinly sliced
  3. 1 sprig of fresh rosemary
  4. To taste, smoked paprika

Serrano and Iberico

  1. 80 g Iberico cheese, cut into 2 cm (1 in.) thick slices
  2. 30 mL (2 tbsp.) quince spread
  3. A few sprigs of fresh parsley
  4. To taste, smoked paprika

Directions

Serrano and manchego

  1. Place a thin slice of fig on a slice of manchego.
  2. Roll up in a thin slice of Serrano ham (cut slice in half lengthwise if it’s too wide).
  3. Garnish with a sprig of fresh rosemary.
  4. Skewer with a toothpick.
  5. Repeat until you have about 8 bites.

Serrano and Iberico

  1. Place a little quince spread on a slice of Iberico cheese.
  2. Roll up in a thin slice of Serrano ham (cut slice in half lengthwise if it’s too wide).
  3. Garnish with a sprig of fresh parsley.
  4. Skewer with a toothpick.
  5. Repeat until you have about 8 bites.
  6. Place bites on a serving platter and sprinkle with smoked paprika.
