Spanish-style potato stew

Ingredients

  1. 30 mL (2 tbsp.) olive oil
  2. 1 onion, chopped
  3. 1 clove of garlic, finely chopped
  4. 1 red bell pepper, cut into strips
  5. 45 g sliced chorizo
  6. 5 mL (1 tsp.) smoked paprika
  7. 2 mL (1/2 tsp.) hot pepper flakes
  8. 3 potatoes, peeled and cut into medium-size cubes (about 875 ml/3 1/2 cups)
  9. 796 mL (1 can) diced tomatoes
  10. 125 mL (1/2 cup) chopped fresh parsley
  11. 100 g grated manchego

Directions

  1. Heat oil in a large, deep skillet and fry onion until translucent.
  2. Add garlic, bell pepper, and chorizo and fry for about 1 minute. Add paprika and hot pepper flakes and continue cooking for about 1 minute.
  3. Add potatoes and combine with other ingredients.
  4. Add tomatoes and simmer uncovered for 45 to 50 minutes until potatoes are tender and sauce has thickened.
  5. Garnish with parsley and grated cheese and serve.

Nutrition tip

This dish is great for tapas nights, but also makes the perfect side for white fish such as cod, sole, or tilapia.
