Easy red lentil soup

Ingredients

  1. 30 mL of olive oil
  2. 2 carrots, diced
  3. 1 onion, chopped
  4. 3 cloves garlic, minced
  5. 10 mL of ground cumin
  6. 10 mL of ground tumeric
  7. 5 ml of salt
  8. Pepper (to taste)
  9. 1 ml of ground cayenne pepper
  10. 1 can (900 ml) of vegetable broth
  11. 250 ml of dry red lentils (coral lentils
  12. 60 ml of finely chopped fresh parsley
  13. 45 ml of lemon juice

Directions

  1. Heat oil in a large saucepan set over medium-high heat.
  2. Cook carrots, onion and garlic for about 5 minutes until they begin to soften.
  3. Stir in cumin, turmeric, salt, pepper and cayenne pepper. Cook for 1 minute.
  4. Stir in broth and lentils and bring to a boil. Reduce heat to medium-low. Cover and cook for 20 to 25 minutes until lentils are tender.
  5. Stir in lemon zest and juice. Divide into bowls and serve with bread croutons topped with melted lactose-free cheddar.
