Pickled red onion

1. 1 small red onion, thinly sliced
2. 30 mL (2 tbsp.) white vinegar
3. 15 mL (1 tbsp.) olive oil
4. A pinch sugar and salt
5. To taste ground pepper

Maple mustard

1. 15 mL (1 tbsp.) old-style mustard
2. 15 mL (1 tbsp.) Dijon mustard
3. 15 mL (1 tbsp.) maple syrup

Chive crème fraîche

1. 125 mL (1/2 cup) crème fraîche
2. 30 mL (2 tbsp.) chives, chopped
3. 1 mL (1/8 tsp.) salt

Microgreen salad

1. 1 pack (75 g) crunchy microgreens, or other variety
2. 15 mL (1 tbsp.) olive oil
3. 7.5 mL (1/2 tbsp.) balsamic vinegar
4. 30 mL (2 tbsp.) fresh dill, chopped (optional)
5. 2 Lebanese cucumbers, sliced
6. To taste salt and pepper
