Slow-cooked rice pudding

Slow-cooked pudding

Ingredients

125 mL (½ cup) long grain white rice (not converted rice)
1 L (4 cups) 3.25% M.F. milk
80 mL (⅓ cup) sugar
10 mL (2 tsp.) ground cinnamon
5 mL (1 tsp.) vanilla
80 mL (⅓ cup) raisins

Dulce de leche caramel

1 can sweetened condensed milk

Directions

Place all ingredients except raisins and sweetened condensed milk in slow cooker. Mix well.
Cook on high for 3 hours.
Stir well, add raisins, and cook for another 30 minutes.

Dulce de leche caramel

Submerge can of sweetened condensed milk in boiling water and continue boiling for 1½ hours. Be sure the can is always submerged under water. It may be necessary to add some water.
Remove can from water and cool completely before opening.
Top each serving of pudding with dulce de leche caramel.
