Shrimp Scampi with Asparagus

Shrimp Scampi with Asparagus

Ingredients

60 mL 1/4 cup olive oil
500 g 1 lb asparagus, trimmed and halved
500 mL 2 cups cherry tomatoes
4 cloves garlic, minced
2 mL 1/2 tsp salt and pepper
1 mL 1/4 tsp red chili flakes
500 g 1 lb peeled deveined shrimp, tail removed (21 to 25 count)
30 mL 2 tbsp lemon juice
60 mL 1/4 cup chopped fresh parsley
1 crusty loaf of bread

Directions

Heat oil in large skillet set over medium-high heat. Cook asparagus, tomatoes, garlic, salt, pepper and chili flakes for 2 to 4 minutes or until asparagus is tender-crisp and tomatoes start to blister.
Stir in shrimp. Cook for 3 to 5 minutes or until shrimp are cooked through and tomatoes start to break down to make a sauce. Stir in lemon juice.
Remove from heat and stir in parsley. Serve with crusty bread.

Alternatively, serve over linguine.
