Ingredients

2 sprigs fresh dill, divided

60 mL (1/4 cup) mayonnaise

30 mL (2 tbsp.) fresh lemon juice (juice of ½ lemon approx.)

2 mL (1/2 tsp.) minced garlic

2 mL (1/2 tsp.) each: salt and freshly ground pepper

24 cooked, peeled shrimp (if small, use 48 shrimp, or 2 per cucumber slice)

1 English cucumber, sliced in 24 rounds
-
150 mL (2/3 cup) sweet red pepper, cut in slivers 2.5 cm (1 in) long (approx. 1/2 pepper)

Directions
- Finely chop enough dill to make 10 mL (2 tsp.). Reserve the remainder for garnish.
- Combine chopped dill, mayonnaise, lemon juice, garlic, salt, and pepper in a bowl.
- Blot shrimp dry with paper towels and add to mayonnaise mixture. Gently stir.
- Place a shrimp on each cucumber slice. Garnish with dill leaves and sweet pepper slivers. Serve immediately.
