Ingredients
Cilantro Salsa

2 cups (70 g) cilantro, stems and leaves, coarsely chopped

2 green onions, cut into chunks

¼ cup (60 ml) vegetable oil

1 tbsp (15 ml) lime juice
Fish Tacos

2 medium-sized sweet potatoes, peeled and sliced into ¼-inch-thick (5 mm) rounds

2 red peppers, seeded and cut into strips

2 tbsp (30 ml) vegetable oil

1 tbsp chili powder
-
1 lb (450 g) white fish fillets (flounder or haddock), cut into large pieces

8 soft wheat tortillas, 8 inches (20 cm) in diameter

2 avocados, cubed

Directions
Cilantro Salsa
- Place the cilantro and green onions in a food processor. Pulse to combine. Add the oil and lime juice and process until coarsely puréed. Season with salt and pepper. Set aside.
Fish Tacos

With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

On the baking sheet, combine the sweet potatoes, peppers, oil and chili powder. Season with salt and pepper. Bake for 25 minutes.

Brush 2 tbsp (30 ml) of cilantro salsa on the fish. Place the fish on top of the vegetables and bake for 10 minutes or until the fish is cooked through.

Serve the vegetables and fish in the tortillas. Top with avocado and serve with cilantro salsa.
