Seafood Patties with Pickled Cucumbers

Ingredients

Pickled cucumber salad

  1. 1 English cucumber, thinly sliced
  2. 125 mL 1/2 cup vinegar for sushi rice
  3. 10 mL 2 tsp. white sugar

Seafood patties

  1. 340 g 4 seafood patties
  2. 60 mL 1/4 cup Sushi à la maison Spicy Mayo

Directions

  1. Thinly slice cucumber and place into a bowl.  
  2. Stir in vinegar and sugar.
  3. Mix well to dissolve sugar.
  4. Cover bowl with plastic wrap and refrigerate for approximately 24 hours. 
  5. The next day, preheat oven to 220 °C (425 °F) and bake patties for 35 to 40 minutes.
  6. Just before serving, remove pickled cucumbers from refrigerator and drain.
  7. Serve with Spicy Mayo.

Chef’s secret 

  • For a more filling meal, serve patties with a complete salad made up of Boston lettuce, mixed veggies and fruit.
