Ingredients

200 g (7 oz.) Sensations by Compliments Rustic Cooked Turkey Breast

125 mL (½ cup) pitted, sliced green olives

125 mL (½ cup) oil-packed sundried tomatoes, drained and coarsely chopped

125 mL (½ cup) water-packed roasted red peppers, drained and coarsely chopped
-
2 cloves garlic
-
20 mL (4 tsp.) each of chopped fresh rosemary and thyme

15 mL (1 tbsp.) lemon zest (about 1 lemon)

45 mL (3 tbsp.) olive oil
-
30 mL (2 tbsp.) butter

500 mL (2 cups) all purpose flour

5 mL (1 tsp.) baking powder

6 eggs

125 mL (½ cup) each of diced feta cheese and grated sharp cheddar cheese

500 mL (2 cups) cauliflower broken into small florets

Directions
- Preheat oven to 180°F (350°C). Grease and line a 23 cm x 13 cm (9” x 5”) loaf pan with parchment paper.
- In a skillet over high heat, sauté the turkey, olives, dried tomatoes, sweet peppers, garlic, herbs, and lemon zest in the oil and butter for about 5 minutes. Set aside.
- Blend the flour and baking powder together in a small bowl.
- Whisk the eggs in a large bowl. Add the cheeses, cauliflower, and reserved turkey mixture, mix well with a wooden spoon, and season to taste.
- Gently incorporate the dry ingredients until batter is smooth, and then pour mixture into the loaf pan. Bake about 30 minutes in the middle of the oven, or until a toothpick inserted into the centre comes out clean.
