Salmon pavé on crispy cabbage

Ingredients

  1. 1.5 L (6 cups) Scotch kale (green cabbage), slic
  2. 45 ml (3 tbsp.) olive oil
  3. 15 ml (1 tbsp.) cumin seeds
  4. 675 g (1½ lb.) salmon
  5. 175 ml (¾ cup) tomato sauce
  6. 1 clove garlic
  7. To taste, salt and pepper

Directions

  1. Blanch the kale for 1 minute in boiling water. Cool under running water and drain well.
  2. Heat the olive oil in a skillet. Sauté the cabbage over high heat with the cumin for 1 to 2 minutes. Season with salt and pepper to taste.
  3. Cut the salmon into 4 equal fillets. Season with salt and pepper to taste. Steam for 15 to 18 minutes or until salmon flakes easily with a fork.
  4. Heat the tomato sauce and add the garlic.
  5. Form a nest with the cooked cabbage in the centre of individual warmed serving plates. Top with portions of salmon, and coat with tomato sauce.
