Greek-style salad with falafels

Greek-style salad with falafels

Ingredients

1 red onion, thinly sliced
10 ml of olive oil
15 ml of white vinegar
Salt
Pepper
1 pack (240 g) of store-bought falafels
1 package (142 g) of baby romaine lettuce mix
½ English cucumber, sliced
125 ml of pitted kalamata olives
250 ml of cubed feta
60 ml of Greek dressing
125 ml of tzatziki

Directions

Preheat oven to 205 °C (400 °F).
Combine sliced onion, oil and vinegar. Season with salt and pepper. Set aside.
Cook falafels on a baking sheet for 12 to 14 minutes or until they reach an internal temperature of 75 °C (167 °F).
Meanwhile, divide lettuce into 4 large serving bowls. Add cucumber, olives, feta and drained marinated onion. Season with salt and pepper to taste.
Arrange falafels alongside the salad and top with tzatziki.
