Ingredients

350 g (¾ lb.) Sunset CampariTM tomatoes

1 bunch asparagus, trimmed

1 227 g (8 oz.) package of cremini mushrooms,

2 cloves garlic, finely chopped

5 mL (1 tsp.) lemon zest

45 mL (3 tbsp.) olive oil

To taste, Salt and freshly ground pepper

Finely chopped fresh tarragon

Directions
- Preheat the barbecue to medium-high.
- Combine the vegetables, garlic, lemon zest, olive oil, salt and pepper in a large bowl. Toss gently.
- Place the vegetables in a barbecue grilling pan with holes, and roast until asparagus is tender-crisp.
- Remove from the barbecue, garnish with tarragon, and serve immediately.
