Roasted mushrooms

Ingredients

  1. 500 g (1 lb.) mixed mushrooms), thinly sliced (oyster, mini bella, shiitake)
  2. 1 onion OR 2 shallots, peeled and thinly sliced
  3. 1 clove garlic, peeled and chopped
  4. 60 mL (¼ cup) olive oil
  5. To taste, salt and freshly ground pepper

Directions

  1. Preheat oven to 230°C (450°F). Line a 30 cm X 45 cm (12 in. X 18 in.) baking sheet with parchment paper.
  2. Combine all ingredients in a large bowl. 
  3. Spread mixture evenly onto the baking sheet and bake 10 minutes on the middle rack. 
  4. Shake the pan and continue baking for 5 minutes or until mushrooms are golden brown and all liquid has completely evaporated.
  5. Set aside to cool. The mushrooms will keep well in an airtight container for 2 days in the fridge.
