Raspberry and apple tofu dessert

Ingredients

  1. 500 mL (2 cups) raspberries
  2. 60 mL (1/4 cup) apple must
  3. To taste, sugar
  4. 125 g (1/4 lb) soft tofu*
  5. 15 mL (1 tablespoon) honey (or more, to taste)
  6. 2 amaretti cookies
  7. 25 g (3 tablespoons) dark chocolate shavings

Directions

  1. Marinate raspberries in apple must.
  2. Remove one third of berries and purée. Strain, and then gently fold into reserved whole raspberries. Divide berries into 2 dessert dishes.
  3. Whisk honey into silken tofu, and spoon mixture onto rapsberries.
  4. Refrigerate dishes for a few hours. Garnish with crumbled amaretti cookies and chocolate shavings.
