Radish, cucumber, and orange salad

Ingredients

Salad

  1. 1 bunch of radishes, trimmed
  2. 1 English cucumber
  3. 3 oranges, separated into sections
  4. 45 mL (3 tbsp.) fresh cilantro, minced

Vinaigrette

  1. 20 mL (4 tsp.) sesame oil
  2. 15 mL (1 tbsp.) rice vinegar
  3. 30 mL (2 tbsp.) lemon juice (about ½ lemon)
  4. 15 mL (1 tbsp.) mirin sauce
  5. 15 mL (1 tbsp.) soy sauce
  6. 15 mL (1 tbsp.) fresh ginger, peeled and grated
  7. To taste, hot sauce, such as sriracha or sambal oelek, to taste (optional)

Directions

  1. Using a mandoline, julienne radishes and cucumber. 
  2. In a large bowl, combine radishes, cucumber, orange sections, and cilantro.
  3. In a small bowl, combine all vinaigrette ingredients. Taste and adjust seasoning as needed. 
  4. Add vinaigrette to salad and mix well. 

Chef’s secret

To separate an orange into sections, trim off both ends and place a cut end on a cutting board. Peel the orange with a sharp knife, being careful to remove all white parts. Cut along the inner membranes to remove each section.

Nutrition tip

Radishes are bursting with vitamin C and antioxidants. They are also rich in sulphur, which gives them their tangy flavour.
