Ingredients

30 mL (2 tbsp.) olive oil

60 g (2 oz.) chorizo sausage, cubed

1 onion, diced

1 clove garlic, minced

5 mL (1 tsp.) smoked paprika

260 g (1 ½ cups) Italian rice (arborio)

500 mL (2 cups) store-bought vegetable broth
-
375 mL (1 ½ cups) water
-
1 red pepper, cut into thin strips

125 mL (½ cup or 70 g) frozen green peas

2 packages (450 g each) Hunter Marine Frutti di Mare

Directions

In a large skillet with high edges, heat olive oil over medium heat and add chorizo. Cook for about 1 minute, then remove chorizo and set aside.

In the same skillet, add onion, garlic and smoked paprika, then sauté for about 2 minutes over medium heat.

Add rice to skillet and mix well. Add broth, water and red pepper and simmer, covered, for 12 minutes over low heat, without overstirring.

Add green peas, Frutti di Mare mix and the chorizo, mix well. Simmer for about 10 minutes over medium-low heat, until rice is al dente. Season to taste and serve.
