Potato and Tuna Croquettes with Pickle Sauce by RICARDO

Ingredients

Pickle Sauce

  1. 1/2 cup (125 ml) sour cream
  2. 2 tablespoons (30 ml) mayonnaise
  3. 1/4 cup (60 ml) dill pickles, drained and finely chopped
  4. 4 small sweet pickles, drained and finely chopped
  5. 1 tablespoon (15 ml) dill pickle juice
  6. 1 tablespoon (15 ml) sweet pickle juice
  7. Salt and pepper

Potato and Tuna Croquettes

  1. 2 cups (500 ml) mashed potatoes
  2. 2 cans 170 g oil-packed tuna, drained
  3. 1 egg
  4. 3/4 cup (180 ml) breadcrumbs
  5. 2 tablespoons (30 ml) butter
  6. 1 tablespoon (15 ml) olive oil

Directions

Pickle Sauce

  1. In a bowl, combine all the ingredients. Season with salt and pepper. Cover and refrigerate.

Potato and Tuna Croquettes

  1. In a bowl, combine the potatoes, tuna, egg and 60 ml (1/4 cup) breadcrumbs. Season with salt and pepper. Place the remaining breadcrumbs on a shallow plate.
  2. Shape the potato mixture into eight patties of about 75 ml (1/3 cup) each. Press on both sides in the remaining breadcrumbs.
  3. In a large non-stick skillet, brown the patties in the butter and oil for about 3 minutes per side or until golden brown. Serve with the pickle sauce and a green salad.
