Plantain banana chips

Plantain banana chips

Ingredients

4 plantain bananas, not too ripe (almost green) with peel removed and sliced diagonally into very thin slices
30 ml (2 tbsp.) olive oil
2 ml (1/2 tsp.) salt
2 ml (1/2 tsp.) pepper
2 ml (1/2 tsp.) Cayenne pepper

Directions

Heat barbecue to medium.
In a bowl, combine the banana slices, olive oil, salt, pepper and Cayenne pepper. Place the plantain banana slices on an oiled sheet of aluminum foil so they do not touch each other.
Place the foil on the grill. Close the cover and cook for 10 minutes or until crispy, turning once after 5 minutes.
Serve as a snack with Compliments salsa and fresh veggies.
