Jean-Philippe Cyr’s Pineapple tofu ham
Pineapple tofu ham

Ingredients

  1. 450 g 1 lb. extra-firm tofu
  2. 8 canned pineapple slices
  3. 8 red maraschino cherries
  4. 1 container 680 g of mashed potatoes
  5. 500 ml (2 cups) brocoli

Marinade

  1. 60 ml 1/4 cup soy sauce
  2. 60 ml 1/4 cup maple syrup
  3. 15 ml 1 tbsp. liquid smoke
  4. 5 ml 1 tsp. onion powder
  5. 30 ml 2 tbsp. vegetable oil
  6. 2,5 ml 1/2 tsp. mustard seeds
  7. 4 whole cloves

Directions

  1. Preheat oven to 350 ̊F (180 ̊C).

  2. Combine all ingredients for the marinade. Set aside.

  3. Slice the tofu into 8 strips, length-wise.

  4. Place the tofu into an airtight container and cover with marinade.

  5. Let marinate for at least 1 hour, flipping the container at regular intervals.

  6. In an oven-safe dish, place the tofu, alternating between tofu, pineapple, and cherries. Pour remaining marinade on top.

  7. Place in the oven. After 10-12 minutes, baste the tofu with the marinade and continue cooking for another 10-12 minutes.

  8. Serve with mashed potatoes and brocoli.
