Pina Colada Oatmeal

Ingredients

  1. 375 mL (1 ½ cups) pineapple, fresh or canned
  2. 375 mL (1 ½ cups) milk or plant-based beverage
  3. 250 mL (1 cup) quick oats
  4. 250 mL (1 cup) vanilla Greek yogurt
  5. 60 mL (¼ cup) chia seeds
  6. 30 mL (2 tbsp.) maple syrup
  7. 30 mL (2 tbsp.) unsweetened shredded coconut

Topping (optional)

  1. To taste unsweetened shredded coconut

Directions

  1. Finely dice pineapple. Refrigerate in an airtight container.
  2. In a large bowl, combine remaining ingredients.
  3. Pour oat mixture into 4 airtight containers. Let sit in refrigerator for 6 hours or overnight.
  4. When ready to serve, top with pineapple pieces and sprinkle with coconut, if using.

Chef’s secret

Keeps in the refrigerator for three days. Do not freeze.

Pineapples contain an enzyme that breaks down protein. This reaction will make the oatmeal bitter if it is stored with the pineapple for more than one day. To make the oatmeal last longer, store the oat mixture and pineapple separately in the refrigerator and assemble only when ready to serve.
