Pesto-Grilled Tomatoes

Ingredients

  1. 4 large tomatoes, halved and cored
  2. To taste, pepper
  3. 30 ml (2 tbsp.) bread crumbs
  4. 30 g (1 oz) freshly grated parmesan cheese (approx. 60ml / 1/4 cup)
  5. 5 ml (1 tsp.) sugar
  6. 60 ml (1/4 cup) Pesto
  7. 30 ml (2 tbsp.) olive oil

Directions

  1. Preheat oven broiler.
  2. Carefully remove the tomato seeds with a small spoon without tearing the flesh.
  3. In an oven-safe pan, warm olive oil over medium-high heat. Place tomatoes in pan flesh side down. Cook 5 minutes without disturbing. Turn and cook 5 minutes on opposite side. Remove from heat.
  4. Brush tomatoes with pesto. Add equal parts sugar, parmesan, and bread crumbs. Season with pepper to taste. Grill for 5 minutes or until tops are golden brown.
  5. Serve immediately with IGA brochettes and linguine.
