Pepper steak stir-fry

Ingredients

  1. To taste, salt and freshly ground pepper
  2. 450 g (1 lb.) slices of beef round steak cut into strips
  3. 20 ml (4 tsp.) canola oil
  4. ½ Spanish onion, minced
  5. 4 cloves of garlic
  6. 2 packages (1 pint) mini bell peppers, seeded and cut in half
  7. 30 ml (2 tbsp.) balsamic vinegar
  8. 250 ml (1 cup) 25% less salt beef broth
  9. 30 ml (2 tbsp.) hoisin sauce

Directions

  1. Season beef strips with salt and pepper. In a skillet, heat oil over medium-high heat. Sear beef for about 1 minute on each side or to desired doneness. Remove strips from skillet, cover with aluminum foil, and set aside.
  2. In the same skillet, sauté onion, garlic, and peppers for 4 minutes over mediumhigh heat.
  3. Add balsamic vinegar and reduce until all liquid has evaporated. Add beef stock and hoisin sauce and continue cooking for 3 minutes or until sauce is slightly reduced and thickened. Add beef strips and mix.
  4. Serve on a bed of rice vermicelli.
