Penne with Vegetarian Sausage

Ingredients

  1. 1 pack Vegeat mild Italian sausages
  2. 500 mL (2 cups) your choice of tomato sauce
  3. 1 box penne
  4. 1 package cherry tomatoes
  5. bird’s eye chili (optional)
  6. Parmesan
  7. fresh basil leaves

  1. 1 box arugula
  2. 40 ml olive oil
  3. 22 ml balsamic vinegar

Directions

  1. Preheat oven to 205 °C (400 °F).
  2. Place half the tomato sauce in a baking dish. Arrange sausages in dish and cover with remaining tomato sauce. Bake covered on the middle rack for 12 to 15 minutes.
  3. While sausages are cooking, cook penne.
  4. Once sausages are cooked, remove and cut into rounds. Return sausage rounds to sauce and add penne and cherry tomatoes. Mix well to combine and serve.
  5. Garnish with Parmesan and basil and serve with arugula salad drizzled with olive oil and balsamic vinegar.
