Pasta with Maple Smoked Salmon

Ingredients

  1. 340 g (¾ lb.) linguine
  2. 15 mL (1 tbsp.) canola oil
  3. ½ red pepper
  4. 250 mL (1 cup) julienned sugar snap peas
  5. 1 clove garlic, chopped
  6. 60 mL (¼ cup) coarsely chopped cashews
  7. 12 cubes of maple hot smoked salmon

Directions

  1. Cook linguine according to package directions.

  2. Meanwhile, heat oil in skillet over medium-high heat. Add peppers and peas.

  3. Cook 3 or 4 minutes. Vegetables should still be crunchy. Add garlic and nuts and cook 1 minute longer.

  4. Add cubes of salmon and pasta to skillet and toss ingredients together.
