Parmesan Mashed Potatoes

Ingredients

  1. 675 g (1½ lb.) Québec potatoes
  2. 30 mL (2 tbsp.) butter
  3. 75 mL (1/3 cup) finely chopped white onion
  4. 75 mL (1/3 cup) white wine
  5. 60 mL (1/4 cup) grated parmesan cheese
  6. 75 mL (1/3 cup) warm milk (add if needed)
  7. 5 mL (1 tsp.) low sodium chicken broth concentrate
  8. 30 mL (2 tbsp.) finely chopped freshparsley
  9. To taste, salt and pepper

Directions

  1. Cook potatoes in a pot of boiling water until tender. Drain and set aside.
  2. In the same pot, heat 15 mL (1 tbsp.) of butter over medium heat. Add onion. Sweat for 2 to 3 minutes or until translucent. Do not brown. Add white wine and reduce until nearly evaporated. Remove from heat.
  3. 3. Add potatoes. Mash with a potato masher. Add remaining butter, Parmesan, milk, and chicken broth concentrate. Blend thoroughly until smooth. Salt and pepper to taste.
  4. Garnish with parsley. Serve with grilled chicken breasts and carrots.

VARIATION:
Replace the Parmesan with grated Gouda cheese. Omit the white wine.
