Ingredients

1 kg (2 lb.) boneless pork loin

5 cloves of garlic, halved

250 mL (1 cup) panko breadcrumbs

60 mL (1/4 cup) butter, at room temperature

1 ripe Bartlett pear, finely diced
-
5 mL (1 tsp.) chopped fresh thyme
-
To taste, salt and pepper

45 mL (3 tbsp.) honey mustard

Directions

Place oven rack in middle position and preheat oven to 200°C (400°F).

Using a small knife, make 10 small incisions in pork loin and insert garlic halves.

In a large non-stick skillet, sear pork loin on all sides over medium-high heat.

Remove from skillet and set aside. In a bowl, combine panko, butter, diced pear, thyme, salt, and pepper.

Brush pork loin with mustard and sprinkle top with panko mixture.

Bake for about 30 to 40 minutes or until a thermometer inserted in the thickest part reads 70°C (160°F).

Cover with aluminum foil and let stand 10 minutes before slicing.

Serve with your choice of vegetables.
