Oysters Rockefeller new style

Ingredients

  1. 24 shucked oysters
  2. 60 ml (¼ cup) butter
  3. 250 ml (1 cup) Paris mushrooms
  4. 2 to 3 shallots
  5. 2 ml (1/2 tsp.) nutmeg (optional)
  6. 500 ml (2 cups ) baby bok choy
  7. To taste, Black pepper
  8. To taste, Bread crumbs
  9. To taste, Parmesan cheese flakes (or grated Parmesan)

Directions

  1. Heat butter in a pan. Add mushrooms, shallots and nutmeg, if using. Cook until tender.
  2. Add baby bok choy, cover, and cook for a few minutes. Remove from heat and add pepper.
  3. Add breadcrumbs until mixture thickens. Divide among oysters.
  4. Add Parmesan and broil (about 10 cm from grill) for 6 to 8 minutes.
