Ingredients
Biere et bacon

6 slices Compliments Fully Cooked Bacon with 50% Less Salt, chopped

3 egg yolks

125 mL (½ cup) beer

30 mL (2 tbsp.) melted butter

10 mL (2 tsp.) Worcestershire sauce
Oysters
-
24 oysters, brushed and cleaned
Mimosa

1 orange, peeled, pith and membranes between segments removed, and then finely diced
-
3 egg yolks
-
125 mL (½ cup) sparkling white wine
-
30 mL (2 tbsp.) melted butter
-
½ orange (zest only)

Directions
- Place the rack in the middle of the oven and preheat to broil.
- Open the oysters, detach them from the shell, and drain them in a strainer. Clean the lower shells and place them on a baking sheet. Place one oyster in each shell. Top with diced orange or bacon depending on the variation.
- Bring water to a gentle simmer in the bottom of a double boiler. In the upper part of a double boiler removed from the heat, use a whisk to energetically beat the egg yolks and the sparkling wine or beer, depending on the variation. Replace it back over simmering water in the double boiler and beat continually for 8 minutes or until sauce is smooth and thick. Add the butter and the orange zest or Worcestershire sauce, depending on the variation, and beat for 1 minute more.
- Remove sabayon from the double boiler and divide it among the oyster shells. Place in the oven for 3 minutes or until the sabayon has browned.
