Oven-baked tarragon fries

Ingredients

  1. 6 yellow-fleshed potatoes
  2. 65 mL (¼ cup) olive oil
  3. 3 garlic cloves, unpeeled
  4. 5 mL (1 tsp.) lemon pepper
  5. 25 mL (5 tsp.) finely chopped fresh tarragon leaves
  6. 5 mL (1 tsp.) fleur de sel

Directions

  1. Preheat oven to 190°C (375°F). 
  2. Slice potatoes into sticks, place them in cold water, and then drain and pat dry on a cloth. 
  3. Combine all the ingredients in a large bowl and then toss the potatoes in the mixture to coat.
  4. Line two cookie trays with parchment paper and arrange the potatoes. 
  5. Bake for 40 minutes, turning at the halfway point, until fries are golden brown.
