Ingredients

  1. 625 mL (2 1/2 cups) Asian-blend frozen vegetables
  2. 15 mL (1 tbsp.) olive oil
  3. 1 clove garlic
  4. 20 mL (4 tsp.) chopped fresh gingerroot
  5. 1 L (4 cups) Compliments Chicken Broth, 30% Less Sodium
  6. 450 g (1 lb) skinless walleye fillets, cubed
  7. fresh coriander (optional)

Directions

  1. Reserve snow peas and bean sprouts from mixed vegetables. In a saucepan, heat oil and sauté garlic, ginger and vegetable
  2. mixture (without snow peas and bean sprouts) for 2 minutes.
  3. Pour in broth and simmer, covered, for 5 minutes. Add walleye cubes and snow peas. Continue cooking for 8 minutes. Pour soup into bowls and top with bean sprouts, dividing evenly. Garnish with coriander if using.
