Ingredients

1/4 cup 60 mL Mint Leaves, fi nely chopped

1 cup 250 mL Strawberries, diced

1 Pear, cored and diced

3 Plums,

1/2 tsp 2 mL Compliment Ground Cinnamon

1/2 tsp 2 mL Compliments Ground Ginger

1 cup 250 mL Couscous

3 cups 750 mL Compliments Orange Juice, pulp free

Directions
- In a small saucepan, bring 2 cups (500 mL) of orange juice to a boil. Stir in couscous, cover and remove from heat.
- Let stand for 5 minutes until all liquid has been absorbed. Fluff with a fork. Place into serving bowl.
- In another small saucepan, bring remaining 1 cup orange juice, ginger and cinnamon to a boil. Reduce heat and simmer for 15-20 minutes, or until liquid is reduced to 1/2 cup (125 mL). Let cool.
- Stir in all the fruits and mint into couscous. Pour cooled reduced juice over mixture and toss until well combined.
