Onion and Chive Potato Galettes

Ingredients

  1. 5 potatoes
  2. 30 ml (2 tbsp.) Compliments olive oil
  3. 1 onion
  4. 60 ml (¼ cup) minced chives
  5. 45 ml (3 tbsp.) chopped fresh parsley
  6. 5 ml (1 tsp.) dried thyme
  7. To taste, salt and pepper

Directions

  1. Boil potatoes until cooked, but still slightly firm. Allow to cool, then grate. Heat oil in a large, heavy-bottom skillet.
  2. Line skillet with potatoes to form a single layer. Sprinkle with onion and chives and season to taste. Cook over medium heat, pressing down on galette with a spatula.
  3. When bottom is browned, divide into four pieces and gently turn over each piece with spatula.
  4. Cook until other side is golden brown and slightly crisp. Serve galettes hot, garnished with chives.
