One-Skillet Garlic Shrimp with Asparagus

Ingredients

  1. 30 mL (2 tbsp.) olive oil
  2. 1 bunch asparagus spears, trimmed and halved
  3. 250 mL (1 cup) cherry tomatoes
  4. 1 bag (340 g) (1 lb.) raw Argentinian 20/40 shrimp, thawed
  5. 4 cloves garlic, minced
  6. 60 mL (1/4 cup) chopped parsley
  7. 1 mL (¼ tsp.) ground hot pepper flakes
  8. ½ lemon, squeezed
  9. 2.5 mL (½ tsp.) salt
  10. 5 Whole Grains Quinoa

Directions

  1. Heat oil in a large skillet set over medium-high heat.

  2. Sauté asparagus and tomatoes for 3 to 5 minutes until they begin to char.

  3. Stir in shrimp, garlic, salt and hot pepper flakes. Cook for 3 to 5 minutes until shrimp turn pink and opaque.

  4. Just before serving, add lemon juice and sprinkle with parsley. Serve with 5 grains quinoa.
