One-pot tomato and plant-based sausage rice

One-pot tomato and plant-based sausage rice

Ingredients

15 ml of canola oil
1 onion, chopped
1 yellow bell pepper, cut into strips
1 pkg (340 g) of Española vegan wheat sausages, sliced
5 ml of salt
310 ml of tomato basil rice
1 can (540 ml) of tomato juice

Directions

In a large covered skillet, heat oil over high heat and sauté onion and yellow pepper for 3 minutes.
Add sliced sausages and salt. Continue cooking for 2 minutes.
Reduce heat to medium-low and add rice and tomato juice. Stir, cover and cook for 10 minutes. Remove from heat and let stand for 5 minutes. Mix and serve.
