Ingredients

15 mL (1 tbsp.) olive oil

6 Amoré Italian sausages, cut into pieces

1 onion, chopped

1 garlic, minced
-
6 small red bell peppers, cut into strips

1/2 green pepper, cut into small cubes

8–10 cherry tomatoes, halved
-
125 mL (1/2 cup) black and green olives
-
45 mL (3 tbsp.) capers, drained

30 mL (2 tbsp.) sundried tomato pesto
-
500 mL (2 cups) chicken stock
-
375 mL (1 1/2 cups) basmati rice, rinsed

To taste, fresh oregano

To taste, basil leaves

Directions

Heat the oil in a large pot. Fry the sausage for 3–4 minutes. Add the onions and sweat them for 2 minutes. Add the garlic. Cook for 1 minute.

Add the peppers, tomatoes, olives, and capers. Cook for 2 minutes.

Combine the pesto and chicken stock.

Add the rice to the vegetable mixture. Cook for 1 minute.

Pour in the stock. Bring to a boil. Cover. Reduce heat to low.

Cook for 18 minutes.

Remove the lid. Mix.

Sprinkle with toasted slivered almond and serve.
