Ingredients

1 pack (300 g) of soba noodles

15 ml of canola oil

1 red bell pepper, cut into strips

1 pack (227 g) of baby bok choy, cut into halves

250 g of grated carrots
-
250 ml of frozen thawed edamame
-
45 ml of gluten-free tamari sauce
-
15 ml of mirin
-
2,5 ml of crushed hot pepper flakes

1 green onion, chopped
-
sesame seeds (to taste)

Directions

In a pot, cook noodles according to package directions. Drain and set aside.

In a wok set over high heat, heat oil and sauté pepper and bok choy for 2 minutes.

Add carrots, edamame, tamari sauce, mirin and hot pepper flakes. Continue cooking for 2 minutes.

Add noodles, heat and mix well.

Serve in bowls and garnish with green onion and sesame seeds.
