Nachos on a cedar plank

Ingredients

  1. 1 Red Cedar Grilling Plank, soaked according to package instructions
  2. 2 L (8 cups) your choice of corn chips
  3. 175 mL (3/4 cup) diced bell peppers (any mix of colours)
  4. 60 mL (1/4 cup) sliced green onion
  5. 60 mL (1/4 cup) pitted, sliced black olives
  6. 250 mL (1 cup) Finely Shredded Tex-Mex Cheese Blend

Directions

  1. Lightly dry soaked cedar plank with a kitchen towel and preheat barbecue to medium-high. 
  2. Cover plank with a layer of chips. 
  3. Sprinkle with one-third each of bell peppers, green onions, olives, and cheese. Repeat to create about three layers of chips and toppings.
  4. Place plank on barbecue and close lid. 
  5. Cook for 5 to 7 minutes or until cheese is melted. 
  6. Carefully remove plank from barbecue and serve nachos right from the plank.
