Ingredients

  1. 2 lb Mussels, cleaned
  2. 1 Onion finely chopped
  3. 1 tbsp Chopped fresh ginger
  4. 1 tbsp Olive oil
  5. 1 cup Coconut milk
  6. 1 tsp honey
  7. 1 tsp rice vinegar
  8. Salt and pepper to taste

Directions

  1. In a saucepan, soften the onion with the ginger in the oil. Season with salt and pepper. Add the cup of coconut milk, honey, and rice vinegar.
  2. Bring to a boil and add the mussels. Cover and continue cooking, stirring frequently until they open (about 5 minutes). Drizzle with the cooking juices.
