Moroccan-Style Brochettes

Ingredients

  1. 750 ml (3 cups) Compliments olive oil
  2. juice of 12 lemons
  3. 15 ml (1 tbsp.) paprika
  4. 75 ml (1/3 cup) ground cumin
  5. 15 ml (1 tbsp.) dried thyme
  6. 10 bay leaves
  7. 1 kg (2 lb.) ready-to-grill lamb or beef cubes
  8. 1 garlic bulb, degermed and chopped
  9. 2 onions,

Directions

  1. Combine all ingredients and marinate meat cubes 2 to 12 hours.
  2. Thread onto skewers (presoak wooden skewers).
  3. Grill to a turn and serve with rice and grilled peppers.

Suggestion for accompaniment: Chabrol Medium-bodied red wine
