Ingredients

2 tablespoons ground flaxseeds

180 g (1 1/4 cups + 2 tablespoons) unbleached all-purpose flour

1 teaspoon ground ginger

1 teaspoon baking soda

1/2 teaspoon baking powder

100 ml (1/3 cup + 1 tablespoon) melted vegetable margarine

60 ml (1/4 cup) unsweetened applesauce

60 g (1/4 cup) cane sugar

60 ml (1/4 cup) molasses

1 teaspoon vanilla extract

Directions
- Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.
- In a small container, mix the flaxseeds with water. Let it sit for 5 minutes to swell.
- Meanwhile, in a bowl, mix the flour, ginger, baking soda, baking powder, and salt.
- In a large bowl, whisk together the melted margarine, applesauce, sugar, molasses, and vanilla until smooth. Add in the flax seed and water mixture. Stir in the dry ingredients with a whisk until the batter is smooth and homogeneous.
- Form 12 balls and place them on the baking sheet. Bake in the center of the oven for 10 minutes or until the cookies begin to golden.
