Ingredients

Mojo pork cutlets

1. 450 g (1 lb.) pork cutlets (leg or loin)
2. 4-5 mL (¾-1 tsp.) salt

Marinade

1. 125 mL (½ cup) freshly squeezed orange juice (about 1 orange)
2. 125 mL (½ cup) freshly squeezed lime juice (about 8 limes)
3. 2 cloves of garlic, finely chopped
4. 2 mL (½ tsp.) Tabasco green pepper sauce or other hot pepper sauce (to taste)
5. 60 mL (¼ cup) olive oil
6. 30 mL (2 tbsp.) brown sugar
7. 2 mL (½ tsp.) ground cumin

Potato salad

1. 800 g (1 ¾ lb.) yellow-fleshed potatoes
2. 15 mL (1 tbsp.) salt

Vinaigrette

1. 60 mL (¼ cup) finely chopped fresh cilantro
2. 60 mL (¼ cup) finely chopped Italian parsley
3. 60 mL (¼ cup) finely chopped green onion
4. 60 mL (¼ cup) store-bought mayonnaise
5. 60 mL (¼ cup) olive or vegetable oil
6. 30 mL (2 tbsp.) freshly squeezed lime juice (about 2 limes)
7. A few drops of Tabasco green pepper sauce
8. To taste, salt and freshly ground pepper
