Ingredients

1/2 package soba or oriental noodles

1 pack (300g) fondue beef

250 mL (1 cup) shiitake mushrooms, sliced

250 mL (1 cup) nappa cabbage cut in strips

250 mL (1 cup) quartered mini bok choy

1.5 L (6 cups) water

60 mL (1/4 cup) miso
-
15 mL (1 tbsp.) finely chopped ginger

15 mL (1 tbsp.) finely chopped garlic

To taste, crushed chilli

125 mL (1/2 cup) red pepper cut into thin strips

125 mL (1/2 cup) bean sprouts
-
1 green oinion, finely chopped

Directions
- Cook noodles according to package instructions. Divide cooked noodles, beef, mushrooms, nappa cabbage, and bok choy into four large soup bowls. Reserve.
- In a large saucepan, combine water, miso, ginger, garlic and crushed chilli. Bring to a boil, stirring constantly to dissolve miso. Reduce heat to medium-low and simmer for 3 minutes. .
- Pour bouillon into soup bowls. Top soup with red pepper, bean sprouts, green onion, and savour!
Variation : Replace beef with fondue chicken or shrimp. And why not replace the vegetables with other Asian vegetables such as Chinese lettuce, daikon, khan choy (Chinese celery) or gai lan (Chinese broccoli)?
