Ingredients

2 apples, cored, and cubed

1 ripe mango, peeled and cubed

250 mL (1 cup) blueberries or blackberries

250 mL (1 cup) strawberries, quartered

15 mL (1 tbsp.) lime juice (about 1 lime)

15 mL (1 tbsp.) liquid honey

6 fresh mint leaves, snipped

15 mL (1 tbsp.) unsweetened coconut, medium desiccated

Directions
- Place fruit in a large bowl. Set aside.
- Mix lime juice and honey together in a small microwaveable bowl. Microwave on high for 15 to 20 seconds to soften honey. Pour over fruit, add the mint, and toss gently. Set aside.
- In a dry skillet, toss coconut over medium heat until lightly toasted, 5 to 7 minutes. Sprinkle coconut over fruit salad right before serving.
