Mexican chocolate sauce

Ingredients

  1. 1 yellow onion, thinly sliced
  2. 3 tomatoes, cut into 8 pieces
  3. 7.5 mL (1½ tsp.) brown sugar
  4. 60 mL (¼ cup) balsamic vinegar
  5. 375 mL (1½ cups) beef broth
  6. 1 bay leaf
  7. 10 mL (2 tsp.) Chinese five-spice powder
  8. To taste, chipotle peppers
  9. 7.5 mL (1½ tsp.) cocoa

Directions

  1. In a heavy-bottomed saucepan, brown the onion and then add tomatoes and brown sugar. Deglaze with balsamic vinegar and reduce by half. 
  2. Add the beef broth and bay leaf. Bring to a boil and simmer for 10 minutes before adding the Chinese five-spice powder and chipotle peppers. 
  3. Strain the mixture through a sieve and keep only the liquid. 
  4. Bring strained liquid to a boil in a saucepan, remove from heat, and whisk in the cocoa. 
  5. Serve sauce over grilled meat and top with coconut flakes. Accompany with red beets that are pan fried after being boiled with nutmeg.
