Ingredients

15 mL (1 tbsp.) olive oil

1 green onion, finely chopped

1 clove garlic, finely chopped

150 mL (10 tbsp.) stewed tomatoes, diced

30 mL (2 tbsp.) fresh chives, chopped

1 can (175 g) tuna flakes, drained

20 medium black olives, pitted, sliced

1/2 lemon's juice

75 mL (5 tbsp.) grated Parmesan

4 pancakes, 23-cm (9-inch)

Directions
- Preheat oven at 200°C [400°F].
- In a frying pan, brown green onion and garlic 2 minutes in oil. Add tomatoes and chives and cook 2 more minutes.
- Turn off the heat and add tuna, black olives, lemon juice and 15 mL (1 tbsp.) Parmesan. Mix well.
- Spread mix evenly over each pancake and roll. Place in an ovenproof dish and sprinkle with Parmesan. Heat in oven 8 to 10 minutes to brown lightly.
