Mediterranean Grilled Veggie Submarine

Ingredients

  1. 4 submarine buns
  2. 250 mL (1 cup) of shredded mozzarella
  3. 125 mL (½ cup) of crumbled feta
  4. 60 mL (¼ cup) of black olives, sliced
  5. 60 mL (¼ cup) of hot pepper rings (optional)
  6. 15 mL (1 tbsp.) of canola oil
  7. 1 bag (350 g) of frozen grilled vegetables
  8. To taste, salt
  9. To taste, pepper
  10. ½ head leaf lettuce, finely chopped
  11. 60 mL (¼ cup) of dressing
  12. 10 mL (2 tsp.) of dried oregano

Directions

  1. Preheat oven to 175 °C (350 °F).

  2. Place open submarine buns on a parchment-lined baking sheet. Divide the cheeses, olives and hot pepper rings between buns and bake for 5 minutes or until cheese is melted and buns are lightly toasted.

  3. Meanwhile, heat oil in a skillet set over medium-high and sauté vegetables for 5 minutes or until they are warmed through and all water has evaporated. Season with salt and pepper.

  4. Remove buns from the oven and top with grilled vegetables and lettuce. Drizzle dressing over top and season with oregano.
