Ingredients

  1. 1 (680 g) carton of ComplimentsCandi-to™ and Compliments Zima™ Tomatoes
  2. 175 mL (¾ cup) olive oil
  3. 1-2 sprigs fresh rosemary (or thyme)
  4. 2-3 bay leaves
  5. 4 cloves garlic, crushed
  6. To taste, salt and pepper

Directions

  1. Preheat oven to 150°C (300°F). 
  2. Place tomatoes in an ovenproof dish and cover with oil. 
  3. Add remaining ingredients. 
  4. Roast in the oven for 1 hour to 1½ hours, or until the tomato skins are split. Do not overcook.
